Here are three easy, delicious, and healthy camping dinner ideas you can try with your friends or family.
SLOW COOKER CHILI
There are so many reasons why chili is a smart choice for camping. It is easy to make, feeds a crowd, uses pantry staples, and is a bargain to boot. It also does not require much kitchen equipment so making it is that much better when using a compact kitchen. You do not even need a recipe for the chili; add tomatoes, a chopped onion, a few drained cans of beans, and a packet of chili seasoning mix. You can brown a pound of ground chicken or turkey to keep it healthy or forego the meat altogether in favor of plant-based protein or more veggies. Cook it low and slow for six to eight hours and call the troops for dinner.
OMELETS
Eggs pack a lot of protein into a little shell, and they can be the basis of a healthy breakfast, lunch, or dinner. You only need eggs, an oil spray, a good pan, and a stovetop burner to bring this simple and flavorful meal to life. Beat your eggs with a bit of water and add them to a hot pan that in which you have already sprayed with your oil aerosol. You can gently stir the eggs to help them set, and then the fun begins. Fill your omelets with any toppings you like; some popular options include spinach, tomato, and feta, mushrooms and bacon, or a blend of cheeses and fresh herbs. Fold one side of the cooked omelet over the other as you slide it out of the pan and voila! Dinner is served.
FOIL PACKETS
Foil packet dinners are a regular for many in the camping world, but you can think past a hamburger patty to keep it healthy. Why not opt instead for slices of sweet potato layered under a chicken breast, mixed veggies such as green beans, broccoli, peppers, onions, or zucchini, and a splash of vinaigrette for flavor? Fold your packets tightly and let them cook over hot coals for twenty minutes or until the chicken is cooked and the veggies are tender.
